Szydłowska prune

The beginnings of Szydłowska prune reach back to the times before World War II. The name derives from Szydłów in Świętokrzyskie Voivodeship where it has been manufactured.

The prune is a plum with or without a stone that has been dried and smoked. This is how it gets its specific smoky taste and smell. Prune shape depends on the plum variety from which it is made: from round flattened to oblong. Plums for smoking are selected to find the biggest ones. Its surface is heavily wrinkled with a shiny dark-blue skin. The plums are smoked in drying rooms for approximately 48 hours.
