Crisp fried squid and smelt served with a cucumber and radish salad

Ingredients

  • squid, cleaned and sliced into rounds 300 g
  • smelt or herring 300 g
  • flour to fry the fish
  • flakes of salt
  • pepper
  • oil for frying
  • cucumbers 2
  • radishes 6
  • double cream 200 ml
  • wine vinegar 1 teaspoon
  • salt and pepper to taste
  • dill
  • lemon

Recipe

Season the squid and smelt or herring with salt and pepper, coat in flour and fry in boiling oil for 3–4 minutes, on both sides. Now place on kitchen paper to dry off. Grate the cucumbers and radishes with a mandoline grater*, season with salt, pepper and vinegar, and mix with the thick cream and chopped dill. Serve this salad with the fried squid and smelt garnished with lemon sections.
