Leniwe dumplings with garlic and sage-flavoured brown butter
Ingredients

- white quark cheese 450 g
- eggs 3-4
- flour 200 g
- butter 30 g
- salt to taste
- Brown butter
- butter 200 g
- a few sage leaves
- cloves garlic 2
Recipe
Combine the quark cheese with the eggs and butter, and season to taste with salt. Place on a pastry board, pour the flour over it. Knead and make thin oblong shapes with the dough, which should be a little sticky. Cut into pieces and cook in boiling salted water. Heat the butter in a pan, preferably a clear-bottomed pan, so that you can watch the cooking process. When the butter is a golden brown in colour, add the garlic and the sage leaves and immediately pour off into a cold bowl. Drain the Leniwe, and serve them doused in the flavoured brown butter.
