Bellini Dessert with Polish cider and wafers


  • fresh peaches or apricots 4
  • sugar syrup 350 ml
  • powdered sugar 100 g
  • sugar 40 g
  • cider 300 ml
  • raspberries 200 g
  • dehydrated raspberries 1 g
  • Batter for the waffles
  • softened butter 25 g
  • sugar 20 g
  • baking powder 2 g
  • egg 0,5
  • wheat flour 40 g
  • water 300 ml


For the wafers: mix the dry ingredients in a blender. Add water, butter and the half egg. Blend. Carefully spread this dough on a waffle iron and cook until you have thin and crusty wafers. Divide the peaches or apricots in half, add sugar syrup and cook sous vide 20 minutes at 56°C. Now pour the syrup in a small pan, and reduce it till you have a caramelized sauce. Sprinkle the sugar on the fruit and burn it lightly with a kitchen torch. Heat the raspberries and sugar and make a thick sauce. Sieve. In individual dessert dishes put some of the caramelized sauce, and some of the raspberry sauce. On top arrange the caramelized fruit and the wafers. Blend the cider in an all-purpose food processor till foamy. Take a little foam and put it next to the fruit. Garnish the dessert with a dusting of dehydrated raspberries.
